Oven-Baked Churro suckling Lamb certificate IGP Return
IGP The Protected Geographical Indication "Lechazo de Castilla y León" was approved by the Junta de Castilla y León in May 1997, ratified and received the quality mark of then European Unión in September of that year.
Their target is to protect and identify the Lechazo de Castilla y León as a product of recognised quality.
Lambs are exclusively fed from breast milk, from the mother. Before the lamb reaches 35 days old the slaughter process must be completed, when the weight of the carcass is between 4.5 and 7 Kilograms. The lamb comes from the Spanish race churra castellana. Its´ meat, pearly white, is very tender, with little infiltration, intramuscular fat, juicy and with a very soft and smooth texture.
Technical Regulatory Council qualifies carcasses by placing a label on each animal, a control number and the date of slaughter.
After that, four bands are placed on the lamb, one at each extremity. These bands enable you to identify the animal and its herd of origin, which guarantees consumers the authentic quality of the lambs from Castilla y León.
