In Finca Santa Rosalía red partridge is raised in semi-captivity, obtaining a unique specimen for its bravery that gives it special characteristics to its meat.

As a culmination of all this process and after a rigorous classification, they are sacrificed and peeled by hand. In our kitchens we prepare the most delicious dishes, pickled, with pochas, stewed, truffled, semi boned, endless varieties each more exquisite, ensuring through each copy, the hunting qualities that have made our partridges a gastronomic icon world known.
